Crisp Oat Pecan Cookies


  I wanted to make some cookies today, and did not want to go to the store, so the recipe had to be something I had in the pantry.
 This recipe in the Taste of Home Winning Recipes was for a cookie mix in a jar. Those are not my favorite type of mixes but the recipe looked interesting. I made it up using their ingredients and normal cookie directions and they are very good. 
  The recipe mix just made one batch of cookies so I wouldn’t bother to make a mix out of it. Do give it a try though as you will never have anyone guess that there are Rice Krispies in the dough. The cookies are light and crisp and crunchy. Just hit the spot and everyone said to make them again, so will keep them in the rotation.
 Here is my adaptation of Oat Pecan Cookies.
Crisp Oat Pecan Cookies
1 cup flour
½ teaspoon baking powder
½ teaspoon baking soda
¾ cup old fashioned or regular oats (not instant)
1 cup crisp rice cereal
½ cup chopped pecans
½ cup softened butter
½ cup granulated sugar
½ cup packed brown sugar
1 egg
1 teaspoon vanilla extract
  Mix the flour, baking powder and baking soda, oats, rice cereal and pecans in small bowl; set aside.
  Beat butter till soft, add sugars and beat till light and fluffy. Beat in the egg and vanilla. Gradually add the the dry ingredients to the butter, egg mixture. Blend till combined.
  Drop by rounded teaspoonfuls on greased or parchment lined cookie sheets.
Bake in 350°F. Oven for 8 to 10 minutes. Do not overbake as they will be hard. They should be brown and look slightly damp. 
  Leave cookies on cookie sheet for a few minutes, then cool cookies on wire racks.

    We thought they were good and a nice change. I used Rice Krispies but I am sure any brand would work. Hope you like them also.

  3. Your cookies look so good, I just copied down the recipe and next grocery run will include crisp rice cereal on the list. Sure appreciate your sharing. Myrna, you mentioned these cookies were going on your rotation. Some time would you, or Sue, or perhaps even both of you, consider sharing how you do your rotations. It would be interesting and informative, to see how this is done. My rotation, is mostly in my head, or that's how I do it now. I would like to make a home journal type thing, with frequently made recipes (so would not have to go to a cook book for it), and also be able to have a written meal plan. To be able to do it this way, am thinking would be easier, to have it all written down, in one place. That and seems it also would make the grocery list a lot easier to make. Hope am not asking too much, as would seem it could well be a real undertaking. I just thought,would ask, if it might be a consideration. Thank you. Gracie

  4. Well, Gracie, That is quite a task. I have the recipes I use on my computer in a file. With the blog, there are only a few that get repeated. We are trying new recipes to keep the blog interesting so in order to be made again in our house, it has to be good. I find having a list under category headings helps when i want to bake or cook something. It also helps remind me what I need from the store to make it. That is as organized as I get I am afraid.

  5. Gracie, I also use a computer file for recipes...the same as Myrna.
    Those recipes we "rotate" at our house, I keep in a ring binder...with the tabbed index pages, just like school.
    When I find a recipe that is the best of it's kind...the best biscuits, wheat bread, pie crust, waffles, salad dressings I make again and again, and the like, they go in my binder, which I keep in the kitchen. I also have a canning binder. My really go-to recipes I keep taped to the inside of my upper cabinet doors...like I've seen in old Hoosier cabinets.
    I don't shop from recipes as a rule, I keep a basic pantry and stock my freezer with basics and cook according to what I already have and what I need to use up.
    If I find something new for the blog that I don't have an ingredient for, I put it on my list...otherwise, I just shop to replenish my pantry and freezer when those items are on sale, if I can, and buy fresh produce according to what's on sale and in season. I do go to the trouble to keep an inventory sheet by my freezer and in my pantry...and do a fair job of not running out. My husband is good about telling me what he has used up, as he also cooks.

  6. Ladies, I sincerely thank you both for your comments and perspective on how you meal plan. I'm not computer savvy as you are, but both your comments were very helpful. Currently, we grow as much veggies/fruit that we can, and put them up for use, till the next gardening season. We rarely shop from recipes, if it calls for what is usually on hand, I'll probably give it a try, or even when say one or 2 pretty common ingredients are called for, may try it. But something totally foreign to what is on hand, it's not even a consideration. This committing to paper, is so foreign to me, but think it will be helpful and time-saving in the long run.
    You both are far more organized than I am...but something am working on. The pantry and freezer inventory is 2 things I also need to add journal book, and also what is canned. I've ordered a 3 inch 3 ring binder and some clear plastic paper protectors for this project. Again, thank you ladies for your help with this :). Gracie
