Make It Yourself...Quick Bread Mix & Applesauce Bread

When Myrna and I saw this quick bread mix and the recipes that used it in “Crisco Cooking" we knew we had to make it.  I volunteered to make the mix and we split it, both making some recipes from it.  I can say that it worked very well and was easy to make in my food processor.  I am including a half recipe if you want to try a smaller amount first.
This is the easy way to make a variety of gift loaves or pot-luck bring-alongs.

Homemade Quick Bread Mix
  6 Cups
12 Cups
5 Cups Sifted All Purpose Flour
 - 20 ounces
10 Cups  Sifted All Purpose Flour
- 40 ounces
2 ½ tablespoons  Baking Powder
1/3 Cup  Baking Powder
2  Tablespoons Sugar
1/4  Cup  Sugar
½ Tablespoon  Salt
1 Tablespoon  Salt
 1 Cups  Shortening
2 Cups  Shortening

Combine flour, baking powder, sugar and salt in a large bowl.  Cut in shortening with a pastry blender or 2 knives until mixture resembles coarse meal.
If making a ½ recipe, you can combine dry ingredients in the food processor and pulse a few times to cut in the shortening.
Store in covered container up to 6 weeks at room temperature.  For longer storage, place in freezer.
To measure, spoon mix into measuring cup and level with spatula.
Cost 2012:  $2.42 for 12 cup recipe
Yield:  "12 Cups"

Here's one recipe Myrna made using the quick bread mix, we'll have a couple more coming up in the next two weeks.

The Homemade Crisco Quick Bread Mix  is good, fast and quick to make. The breads turn out well. I made two different recipes from the share of the mix Sue gave me. If you need something in a hurry, this would be a good way to go. No need to get out the mixer for this recipe. Just a bowl and spoon.
It is so nice to have a mix on hand to make quick bread when you need that last minute baking, your kid forgot to tell you they need something for school or you have a bake sale you need something for.   The store mixes are expensive and have a lot of preservatives.
The texture and flavor is excellent. I am not sure how long it would keep as we ate it so fast.
Nutty Applesauce Bread
2 cups homemade Crisco quick bread mix
½ cup sugar
1/2 teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 cup finely chopped nuts
1 egg
1 cup unsweetened applesauce
Preheat oven to 350°. Grease a 9x5x3 inch pan. Chop the nuts.
Combine Crisco mix, sugar, nutmeg, baking soda, cinnamon and nuts in a large bowl. Beat egg with a fork, stir in applesauce. Add to bowl and stir only until dry ingredients are moistened.
Turn batter into the greased pan. Bake at 350° for 45 to 50 minutes or until golden brown.
Cool for 10 minutes in pan on a rack. Remove from pan and cool slightly on a rack before slicing. Good served with the soft cream cheese.

  3. Tracy, I am not sure of what you are asking. The directions for the applesauce bread are with the recipe.
Are you wanting general instructions for the mix?
