canned or purchased. Those jars and cans

hamburger into hamburger mix in March to help clean out our freezer so I can
defrost it soon, and I canned more bean soup and split pea soup this week, using
frozen sale priced ham shanks, to replace what we have used and to get more meat out of the
freezer.<span style="mso-spacerun: yes;"> </span></p><div style="margin-bottom: 0in; text-align: left;">I spent $54 dollars at Aldi…I
hadn’t been there since Thanksgiving.<span style="mso-spacerun: yes;">
</span>Everything was at least 10% to 20% higher in price. I purchased 2 cases of mandarin oranges for $27.80 <i><b>($1.14 each)</b></i>, a case of chili beans for $6.60 <i><b>(55¢ each)</b></i>, a case of peach slices for $11.78 <b><i>(98¢ each)</i></b> and a dozen 8 ounce tomato sauce cans for $3.72 <i><b>(31¢ each)</b></i> plus some celery and onions for my hamburger mix canning project. </div><div style="margin-bottom: 0in; text-align: left;"><b><i>Gas prices went up another 11¢ a gallon the next day.</i></b><br /><b>We have used
all our canned goods that predates use-by last year, so we’re in good shape.</b><b> </b> Our pantry is mostly basic groceries we
use all the time: rice and barley, oatmeal and grits, pasta, dried peas, lentils and beans, flours, sugar, honey, seasonings and condiments in smaller amounts, and other baking
supplies and home canned and purchased canned goods. Most of the non-canned foods are bulk purchases. We have a freezer in our heated, attached garage.<br /><b>We find canned goods are useful</b> when we don’t
have power to cook as they can be eaten from the jar if necessary, and they
include liquid if you don’t have a water supply either in an emergency. And of course, they are shelf-stable, no refrigeration needed. It's great not to have to thaw anything before use, making last minute menu changes easy. The other plus is we rotate them into our
daily meals regularly. My mother and mother-in-law both canned and stocked a "fruit-room or root cellar" and we learned to help preserve and eat what our families grew.<br /> <b>Right now,
it appears that investing in a pantry has saved us money</b> as we are eating at last year's prices, a better return than a bank account.<span style="mso-spacerun: yes;"> </span>I am replenishing the pantry at sale prices
whenever possible.<span style="mso-spacerun: yes;"> </span>I shop for the pantry
and freezer inventory and plan our meals from that instead of impulse buying at
the last minute. I have increased our level of supplies this time because of rising prices and uncertainty about what's ahead.</div><div style="margin-bottom: 0in; text-align: left;"><b>I have a homemade cookbook binder of recipes we like that use our canned and pantry foods,</b> and some of those are "20 minute meals" so we aren't tempted to buy fast food. My husband helps by making coffee, setting the table, getting our dessert and salad on the table and cooking breakfast on the weekends, for example. Kids are good helpers with chores like this too.</div><p class="MsoNormal" style="margin-bottom: 0in;"><o:p></o:p></p>

that since January 1, we have gotten a substantial increase in our health
insurance, car insurance, gasoline, natural gas and this week, a 6% increase in
our garbage pickup (they use diesel of course).<br /><b>About the only area where we can say “NO”
is in food and supplies-also buying clothing, cosmetics, household decorations
and furniture, dining out, etc. are in for heavy scrutiny.</b> We don’t need more household stuff; luckily,

toffee bars similar to one Myrna and I used to make when we were still
teen-agers, but I didn’t want a huge amount, so I tried cutting down this
recipe that had a bonus for me…it used Bisquick, so I could substitute my
homemade biscuit mix.<span style="mso-spacerun: yes;"> </span>I have been trying
recipes that use the mix so I can keep it turned over. <o:p></o:p></div>

They were successful;
my husband especially liked the toffee-like crunchiness.<span style="mso-spacerun: yes;"> </span>I liked that I didn’t have leftovers, and it
took just minutes to mix up and get in my toaster oven.<span style="mso-spacerun: yes;"> </span>I used my Le Creuset 4 x 6” casserole dish
and got 6 small squares. They made bars that are a little thinner than the
regular recipe and that’s what we liked.<o:p></o:p></div>

measuring cup and stirred in the brown sugar and biscuit mix, spread it in my

<li>Bake in a preheated
350 degree oven for 20-25 minutes, until golden brown.</li>

after removing from oven, spread chocolate chips over top of crust and let sit
for 2-3 minutes.</li>
<li>Then, using
the back of a spoon or offset spatula, spread chocolate to cover evenly.</li>
<li>Sprinkle
coconut and nuts over top and gently press in to secure. Remove from pan and
let cool completely on rack before cutting.<span style="mso-spacerun: yes;">

We had not made the 70 mile trip since October of last year. Everything else was 10% to 20% higher than our last trip in the fall, same as our local groceries, except for my poultry purchase. Bulk canning lids were in stock, but the sign said "Imported", not the Ball commercial canning lids they usually carry...I have about 500 lids on hand at home.</p><p style="clear: both; text-align: left;"><b style="mso-bidi-font-weight: normal;">I bought what bulk
groceries I needed to replenish our pantry, and lucky me, I found 3 pound
packages of nice boneless, skinless chicken thighs which are what I like to can
for $3.99, or $1.33 per pound!</b><span style="mso-spacerun: yes;"> </span>Since
I paid $2.79 a pound for the last chicken thighs I purchased for canning, this
was a great deal! The local HyVee grocery chain had them on sale for 99¢ a
pound a week or so ago, but the store here never got any.<span style="mso-spacerun: yes;"> </span></p><p class="MsoNormal" style="text-align: left;"><o:p></o:p></p>
<p class="MsoNormal" style="text-align: left;"><b style="mso-bidi-font-weight: normal;">I brought the chicken thighs home
and thawed them and canned 6 pounds of them on Tuesday.</b><span style="mso-spacerun: yes;"> </span>The other package went in the freezer.<span style="mso-spacerun: yes;"> </span>I got 19 half pint jars with 4 ½ ounces of
cooked meat in each jar and all of them sealed too.<span style="mso-spacerun: yes;"> </span>If you want to cook them for the freezer

announced it had found Avian flu in a flock of chickens in Iowa</b>…also a home
flock with about 40 birds that had to be destroyed and the location was
quarantined.<span style="mso-spacerun: yes;"> </span>From experience, we know
that this problem will eventually spread to commercial flocks and prices for
poultry and eggs will skyrocket.<span style="mso-spacerun: yes;"> </span><o:p></o:p></p>
<p class="MsoNormal" style="text-align: left;"><b style="mso-bidi-font-weight: normal;">I now have 5 dozen
jars of canned chicken from 2021 and this week in my pantry…up from my usual
stock of 3 dozen.<span style="mso-spacerun: yes;"> </span>This will provide us
with plenty of cooked chicken for soups, casseroles, chicken salad, and the

Don't let raw chicken contaminate the area or come in contact with cooked chicken.</span><br /><b style="mso-bidi-font-weight: normal;">Place sheets in the oven.<span style="mso-spacerun: yes;"> </span></b>Set one timer for 5 minutes and another
for 10 minutes.<br />After 5
minutes reverse pan locations and continue baking until meat looks just set,
about another 5-7 minutes.<br />Total time
about 10-15 minutes, depending on how cold the chicken was at the beginning.<br /><b style="mso-bidi-font-weight: normal;">Meanwhile, heat the remaining ingredients
in the microwave.<span style="mso-spacerun: yes;"> </span>Prepare jar lids according to package directions.<br /></b><b style="mso-bidi-font-weight: normal;">Place <span style="background-color: #fcff01;">empty</span> half pint jars in pressure canner
with 3 quarts of water.</b><span style="mso-spacerun: yes;"> </span>Let it come
to a low boil, with canner lid on but not tightened.<span style="mso-spacerun: yes;"> </span>(This is to eliminate thermal shock so your
jars don’t break.<br /><b style="mso-bidi-font-weight: normal;">Prepare trays to fill jars.<span style="mso-spacerun: yes;"> </span>Get out rings, lids, jar lifter, lid magnet,
plastic knife, ladle, dinner tablespoon.<br /></b>Remove pans
from oven; place at sink and fill each hot jar with 4 1 /4<span style="mso-spacerun: yes;"> </span>ounces of meat, weighing jars.<span style="mso-spacerun: yes;"> </span><span style="background-color: #fcff01;">Fill jars with broth to <b style="mso-bidi-font-weight: normal;">within one inch</b>. <b style="mso-bidi-font-weight: normal;">Remove

lids and place in canner.<br />Put lid on
canner; let vent 10 minutes, cover and time for 1 hour and 15 minutes after

heat and let cool on rack until pressure comes down of its own accord, about 25

more expensive and in short supply…I mentioned plastic freezer bags which have
doubled in price here recently and said I guess I would have to start rinsing
them out and reusing them like Mom did.<span style="mso-spacerun: yes;"> </span></span></div><div style="text-align: left;"><span style="font-size: medium;"><b>Next question…When did we stop doing those frugal things that we used to
do when we first married? </b><i><b>(Both of us are north of retirement age.)</b></i><br /><b>She had the answer…”When we went to work!”</b><span style="mso-spacerun: yes;"> </span></span></div><div style="text-align: left;"><span style="font-size: medium;">I didn’t work the first few years I had a child
but then went to work full-time when he was in school, as many other moms did

home and more money to spend…<br />We went through the “Jimmy Carter” era with sky-high <i><b>(north of 18%)</b></i> interest rates; and worked hard to get debt-free so we wouldn’t have to pay
those rates.<span style="mso-spacerun: yes;"> </span>Then retirees our age got
hit with low interest rates which depleted our savings as we could no longer
live on the interest.<br /><b>We both are trying to think like Grandma again... "Use
it up... Wear it out... Make it do... Or do without".</b><b><br />Sadly, it appears that our money isn’t ours anymore either;
inflation is a tax on all of us.</b><span style="font-weight: bold; mso-spacerun: yes;"> </span><b>We’re

I was

were simple to mix up with pantry ingredients I always keep on hand; another plus.
My husband isn’t a real chocolate fan but he thought this dessert was “just
pretty good”…he asked what I used for the chocolate flavor because he

some 10 ounce ramekins in my toaster oven, and let them cool about an hour

only 70’s mom who didn’t make this casserole…but I guess it’s never too
late.<span style="mso-spacerun: yes;"> </span>When I was looking through my <b style="mso-bidi-font-weight: normal;"><i style="mso-bidi-font-style: normal;">Betty
Crocker’s Timesaving Cookbook 1982 </i></b><span style="mso-spacerun: yes;"> </span>I found this recipe that used two of my
favorite timesavers…<b style="mso-bidi-font-weight: normal;"><a href="https://iowasue.blogspot.com/2015/07/home-canned-hamburger-mix.html">hamburger
mix</a></b> and <b style="mso-bidi-font-weight: normal;">homemade biscuit mix</b>.<span style="mso-spacerun: yes;"> </span>I cut it down to 2 servings and baked it in
my Le Creuset 4 x 6” casserole dish.<span style="mso-spacerun: yes;"> </span>It
fit perfectly.<span style="mso-spacerun: yes;"> </span>My Le Creuset 5 x 5” pan

I’d rather go out for a meal instead of “eating groceries”, I usually am tired
of cooking</b>. Here’s an example of a
quickie recipe I have made even easier…and it’s one I make on those days I’m

had the vegetables cleaned, chopped or sliced and bagged up in the

slice what I don’t use right away and bag it up for the freezer.<span style="mso-spacerun: yes;"> </span>I buy extra peppers when they are on sale and
cut some in wedges that I use like that or slice or chop for a recipe, and I
also bag some up that are chopped.<span style="mso-spacerun: yes;">
</span>Again, in the freezer.<span style="mso-spacerun: yes;"> </span>The same
thing with onions…I buy extra on sale and slice some vertically and chop some
and bag them up.<span style="mso-spacerun: yes;"> </span>When I’m ready for soup
or stir fry or casseroles I just break off what I want, return the rest to the
freezer and proceed with the recipe<b style="mso-bidi-font-weight: normal;">.<span style="mso-spacerun: yes;"> </span>Even in stir fries the frozen vegetables are
acceptable in texture and I save both time and bucks.<span style="mso-spacerun: yes;"> <br /> </span><o:p></o:p></b></span><span style="font-size: medium;"><b style="mso-bidi-font-weight: normal;">I also had my sausages already portioned
out for recipes </b>in the freezer from a large bulk bag of sausages I bought
on sale.<span style="mso-spacerun: yes;"> </span>I portioned them out before
freezing them at home.<span style="mso-spacerun: yes;"> </span><b style="mso-bidi-font-weight: normal;">I use any kind of sausage links I have on
hand </b>for most of my sausage meals.<span style="mso-spacerun: yes;"> </span>I
can usually buy them fairly cheaply frozen at our nearest Amish/Mennonite
store.<span style="mso-spacerun: yes;"> <br /> </span></span><span style="font-size: medium;"><a href="https://iowasue.blogspot.com/2018/02/cooking-rice-in-stovetop-pressure-cooker.html" target="_blank"><b style="mso-bidi-font-weight: normal;">I use my instant pot or pressure cooker </b><b>to
save time with rice.</b></a><span style="mso-spacerun: yes;"> </span>I usually make at
least 3 cups of white rice or wild rice/brown rice mix and bag it up in 1 cup
packages for the freezer.<span style="mso-spacerun: yes;"> </span>It thaws quickly
and I can reheat it quickly in my stir-fry pan for this recipe or in the
microwave for a side dish.<span style="mso-spacerun: yes;"> </span>I do this
when I don’t have a busy afternoon and I have it ready for my menu anytime.<br /></span><span style="font-size: medium;"><b style="mso-bidi-font-weight: normal;">The other timesaver is “Mise en Place” </b>or
everything in its place…I had my ingredients on a small tray…the veggies
together because they cook about the same time, and the sausages sliced up, and
the freezer bag of rice.<span style="mso-spacerun: yes;"> </span>With the
butter, oil and maple syrup, I had everything ready to cook in less than 10
minutes.<span style="mso-spacerun: yes;"> </span>I organized most of my
ingredients at breakfast time for lunch and kept them refrigerated until I was
ready to cook.<span style="mso-spacerun: yes;"> </span>I also set my table and
set out my pan ready for cooking.<br /></span><b style="mso-bidi-font-weight: normal;"><span style="font-size: medium;">I serve a dish like this with fruit for

breakfast sausage patties, as I had all of them in the freezer, but we enjoy
the ham patties and I make a full recipe when our Fareway store has their ham
loaf mixture (half ham, half ground pork) on sale and stash them in the freezer
for days like this.<span style="mso-spacerun: yes;"> </span>I fry them from
frozen for 3 minutes on one side and two on the other.<span style="mso-spacerun: yes;"> </span>The grits are the quick grits, not instant
grits and take about 4-5 minutes to cook.<span style="mso-spacerun: yes;">
</span>I already had the pears dished up and in the fridge, and it takes just a
few minutes to microwave frozen mixed vegetables.<span style="mso-spacerun: yes;"> </span>I also keep shredded cheese in the freezer
and just broke off what I needed for my grits.<span style="mso-spacerun: yes;">
</span>I buy frozen vegetables when they are on sale too, and keep a supply of
canned fruit in the pantry, as well as bulk grits.<o:p></o:p></p>

Lunch for 2.</span></div><div><span style="font-size: large;"><span style="color: #990000;">It got me thinking about this little World War II leaflet from Betty Crocker – called</span> <b><i>Your Share</i></b>. They gave hundreds of ideas for stretching wartime rations. In today’s economy, these ideas still apply. Here are some that I liked.</span></div><div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgHdg8w-P4bhoLOMppbQH3Cm0dwcVMzyDpm6n2DtLjoiPpSLvQh0l1flA9TQpQjDBnmNrI96A2gCk5JIr-v1UdC_rEyadYPUP882FDm5C8nqsrDFVZecZ2fzuYFj9sWg2zg4d3lSOMKWfI/s799/BC+Your+Share+WW2+cookbook.jpg" style="margin-left: 1em; margin-right: 1em;"><img border="0" data-original-height="799" data-original-width="544" height="640" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgHdg8w-P4bhoLOMppbQH3Cm0dwcVMzyDpm6n2DtLjoiPpSLvQh0l1flA9TQpQjDBnmNrI96A2gCk5JIr-v1UdC_rEyadYPUP882FDm5C8nqsrDFVZecZ2fzuYFj9sWg2zg4d3lSOMKWfI/w436-h640/BC+Your+Share+WW2+cookbook.jpg" width="436" /></a></div><br /><div><br /></div><div><b><span style="font-size: large;">Stretching one serving into two:</span></b></div><div><ol style="text-align: left;"><li><span style="color: #990000; font-size: large;">Add mashed beans or bread or oatmeal to ground meat for meatballs, meat loaves or patties.</span></li><li><span style="font-size: large;">Add beans and/or grains like rice or barley to soups.</span></li><li><span style="color: #990000; font-size: large;">Top leftover stew with mashed potatoes or biscuits or a biscuit or cornbread crust and bake.</span></li><li><span style="font-size: large;">Turn stew into soup by adding water – perhaps adding a handful of vegetables.</span></li><li><span style="color: #990000; font-size: large;">Chop meat into smaller pieces – for example, grind ham and moisten it with some salad dressing –you’ll get more sandwiches.</span></li><li><span style="font-size: large;">Make meat rolls or pies by chopping meat, adding pickles and mayo, then spread on biscuit dough, roll up and bake, or roll up, cut into slices and bake, or shape into pies either with biscuit dough, yeast dough or piecrust dough.</span></li><li><span style="color: #990000; font-size: large;">Stir-fry – again, cutting meat into smaller pieces and adding vegetables – best if you grew them yourself.</span></li><li><span style="font-size: large;">Add beans and less meat to casseroles.</span></li><li><span style="color: #990000; font-size: large;">Stir some tomatoes and a little cooked ground beef into leftover macaroni and cheese; reheat and serve.</span></li><li><span style="font-size: large;">Bake meat with stuffing – you can serve a smaller portion of meat if you serve it over stuffing or stuffed with stuffing, like a pocket in small pork chops or chicken breasts.</span></li><li><span style="color: #990000; font-size: large;">Wrap thin ham slices or beef slices around vegetables to make rolls – whole green beans, long carrot strips or asparagus.</span></li><li><span style="font-size: large;">Scallop meat with potatoes, white sauce and bread crumbs.</span></li><li><span style="color: #990000; font-size: large;">Cream diced meat and serve over toast, biscuits, rice, noodles or potatoes.</span></li><li><span style="font-size: large;">Make old-fashioned croquettes; grind cooked meat and add rice or bread crumbs; moisten with thick white sauce. Fry or bake.</span></li><li><span style="color: #990000; font-size: large;">Stuff vegetables with cooked, ground meat or poultry – you can add rice, bread crumbs and stuff green peppers, for instance. Bake.</span></li><li><span style="font-size: large;">Make soufflé or quiche. Only the French could turn a couple of eggs and a handful of dry cheese into a gourmet treat.</span></li><li><span style="color: #990000; font-size: large;">Save bacon fat and use a little to wipe on your pan before frying eggs, etc.</span></li><li><span style="font-size: large;">Use all of the vegetable: tough parts of asparagus and broccoli make delicious cream soups; celery leaves are excellent in soups and stews; combine leftovers and peelings in a freezer container and cook and puree for cream soups.</span></li><li><span style="color: #990000; font-size: large;">Fruits a little past their prime make cooked sauces, upside-down cake, can be used for cobblers, crisps, added to muffins or cakes or quick breads, etc. </span></li><li><span style="font-size: large;">Save stale bread and bread heels and let it dry.
