This recipe is from a 1954 Betty Crocker’s Good and Easy Cook Book I’ve had since college, maybe the first cookbook of my own. It’s so well used it has the binding taped up. I like the book because most of the recipes use little or only basic convenience foods because it’s so old. I have changed the recipe a little to reflect newer cooking methods and our tastes, but it’s simple and good.
If you have children at your meal, or you think your guests may not be adventurous eaters, simple but good recipes like this are just right. The cookbook’s menu is bacon wrapped cheese-stuffed hot dogs, baked beans, potato salad, relish plate, rye bread, cheese and crackers and brownies and fresh apples.
Baked Beans
1/3 Cup Onion -- finely chopped
1 Tablespoon Butter
2 Cans Baked Beans With Pork and Tomato Sauce -- 15 ounce
2 Tablespoons Molasses -- or brown sugar
2 Tablespoons Chili Sauce or ketchup
1 Tablespoon Prepared Mustard
3 Strips Bacon -- crumbled
Microwave the butter and onions 3 minutes in a 1 1/2 quart casserole. Stir in remaining ingredients except bacon, bake, uncovered, at 350° for 1 hour. Microwave or cook bacon, crumble, top casserole and bake an additional 10 minutes until thick.
Yield: "1 Quart" 6 servings
Per Serving: 142 Calories; 4g Fat (26.5% calories from fat); 6g Protein; 22g Carbohydrate; 4g Dietary Fiber; 14mg Cholesterol; 476mg Sodium. Exchanges: 1 Grain(Starch); 0 Lean Meat; 0 Vegetable; 1/2 Fat; 1/2 Other Carbohydrates.
