Tender Pears in Almond Cream Sauce

  Sadly my photo didn't reflect how good this dessert was. The recipe in the Land O Lakes Heritage cookbook for Pears in Almond Sauce had a lovely picture with their recipe. So simple and when pears are in season so good.
  I didn’t have enough pears and so had sauce left. We thought it was so tasty, that I am saving the leftover sauce and will buy some more pears to make this again. Be sure that you have six cups. My pears must have been smaller than medium as I was nowhere close to that.  It took about 8 minutes to make. I will try adding a slight amount of lemon to the pears before cooking as this is sweet. Good though. 
Tender Pears in Almond Cream Sauce
1/4 cup butter
6 cups firm ripe pears, (about 4 medium) cored, sliced ½ inch thick
⅓ cup firmly packed brown sugar
1 teaspoon almond extract or 2 teaspoons Amaretto
½ cup whipping cream
  In 10 inch skillet melt butter; add pear slices. Cook over medium heat, stirring occasionally, for 3 minutes. Stir in brown sugar and almond flavoring. Continue cooking, stirring occasionally, until pears are fork tender* (3 to 5 minutes). Remove pears with slotted spoon to individual serving dishes. Gradually stir in ½ cup whipping cream to liquid in skillet. Cook on medium high heat, stirring constantly until sauce is reduced to desired consistency. Pour sauce over slices. If desired, serve with sweetened whipped cream and sliced almonds.
*Barlett pears will require less cooking time than Bosc or Anjou.
