Bouquet Coffee Cake


This is another sweet roll idea from "Fleishmann's Yeast Best Ever Breads".  You can make a pretty, large coffee cake for a breakfast buffet or separate the rolls and make individual ones.  Choose whatever jam your family likes, or more than one flavor.  My husband likes frosting, so I drizzled a little on these just for him.                 
                           Bouquet Coffee Cake
                        Dough
     1/2   cup  Milk -- Combine with water and heat to 120° to 130°
  2          Tablespoons  Water
  2 1/4   cups  Flour, All-purpose -- (10 1/8 ounces)
  2          Tablespoons  Sugar
     1/2   teaspoon  Salt
  1          teaspoon  Instant Yeast
  2          Tablespoons  Butter
     1/2   large  Egg -- (2 tablespoons) (save remaining for topping)
                        Topping
     1/2   Large  Egg
     1/2   Tablespoon  Water
                        Filling
     1/3   Cup  Strawberry Jam -- or raspberry

In large mixer bowl, combine flour, sugar, salt, yeast, softened butter and egg.  Add milk and water mixture; beat at medium speed, scraping bowl often, until smooth - 1-2 minutes.  Add remaining flour until dough leaves sides of bowl.
Change to dough hook and knead on setting 2 for- 6 minutes.  Let rise in bowl, in warm place, covered, 20 minutes.  Punch down dough. Prepare filling while dough is rising.
Roll dough into a 14 x 6" rectangle.  Cut into 14 strips about 1" wide.  Twist 2 strips together.  Form into a coil and tuck ends underneath.  Repeat to make 7 coils.
Place 1 coil of dough in center of greased or parchment lined baking sheet.  Arrange remaining coils around center coil in a circle with sides lightly touching.  (If preferred, separate rolls for individual sweet rolls instead of a coffee cake).  Cover; let rise in a warm place until doubled, about 20-25 minutes.  Lightly beat remaining egg with water and brush on dough.  With thumb, press deep indentations into center of coils and fill each with about 2 teaspoons of jam.
Bake at 375° for 20 minutes or until done.  Remove from sheet and let cool on rack.  If desired, drizzle with a little powdered sugar glaze.

  2. I am always looking for ways to make my sweet breads appealing to the eye. Tea Rings are a standard, but going to give this a try!
