I love potato pan...Catching up on my reading here.<br /><br />I love potato pancakes, and seemed like we always had left-over mashed potatoes with which to make them when I was a kid at home. But yeah, they sure did soak up the fat.<br /><br />I hadn't thought of using panko. What a great idea! Do you make your own panko? So easy, 'way cheaper than buying.
