Spinach Apple Toss


If you want a very nice salad combination, this is it.  I found some really crisp, sweet, new crop apples and the Colby cheese is from the Kalona Cheese House at the Twin County Dairy north of Kalona, Iowa.  It’s so well known, in the Stringtown Amish area, that P. Buckley Moss actually used the store in a picture.
The dressing on this salad is so simple and delicious on a fruit salad, it was a real surprise.  With the bacon, egg and cheese, it can be a main dish for a light lunch. 
                            Spinach Apple Toss
  4        Slices  Bacon -- 1/2" pieces
  4        Cups  Spinach Leaves -- torn
  2        Large  Eggs, Hard-boiled -- sliced
  2        Medium  Red Apples -- cored, 1/4 " slices
  2        Ounces  Colby Cheese -- very thin slices
     ½    Cup  Mayonnaise
  2        Tablespoons  Orange Juice

Cook bacon, drain off fat.
In large salad bowl, combine all remaining ingredients except mayonnaise and orange juice.
Stir together mayonnaise and orange juice.  Add bacon to salad mixture.
Pour 2 tablespoons dressing over salad; toss to coat.  Serve with remaining dressing.
