This is a delicious vegetarian recipe from
"Land O Lakes Occasionally Vegetarian". We enjoyed the combination of flavors and texture and the simplicity of
preparation. I used golden raisins, my
favorite. I think fresh tangerine
sections would be excellent in this recipe too.
This is a nice dish to serve as a side for meat eaters, and to give your
vegetarian and gluten-free guests another choice of dishes.
Sweet Mandarin Rice
3/4 Cup
Rice -- uncooked, long grain
1/3
Cup Raisins
2
Tablespoons Butter (optional)
1/2 Teaspoon Nutmeg -- ground
2
Tablespoons Honey
1/3
Cup Sliced Almonds -- toasted

Ounces Mandarin Orange -- canned,
drained
Cook rice
according to package directions. Stir in
raisins, butter, nutmeg and honey.
Cook over
medium heat until heated through (3-5 minutes). Gently stir in almonds and oranges, let
stand 1 minute to heat through.

I like the sweet rice recipe. Lately, I have discovered dried cranberries which would give this recipe bit of a kick! They could be mixed with raisins to keep cost down, but add additional flavor and color complementing the mandarin orange. Thanks for sharing this recipe. Mrs. C
