Fall is soup time for us…this is one of our
favorites. It’s quick and simple using
canned black beans – I usually can our own.
Served with hearty crackers or bread it’s a meal.
Sausage and Black
Bean Stew
4
ounces Chicken and Apple Sausage
-- sliced (or your preference)
1
cup Onion -- chopped
3/4
cup Celery -- chopped
2
teaspoons Garlic -- chopped
1
cup Beef Bouillon
2 cans or pints Black Beans, Canned --
drained and rinsed
1
cup Spaghetti Sauce -- (or salsa)
(chunky)
1 1/2
teaspoons Cumin
1/2
teaspoon Onion Powder
2
dashes Oregano
Brown
sausage, remove. Combine all, cover and
simmer for 20-25 minutes until vegetables are tender, add sausage and
heat. Makes approx. 3 cups
4 servings
Yield: "1 1/2 quarts"
