Tortellini or Ravioli in Cream Sauce


As you can guess, this isn’t tortellini in the photo of this dish…I had frozen ravioli on hand instead, and it was just as good or better.  I also didn’t have the frozen vegetable mix called for in the dish; I used what I had in the freezer; broccoli and garden red peppers.  I did follow the method and amounts, however, and this is truly a tasty, quick meal.    It’s really a simple, real Alfredo, and much, much better than anything you can buy in a jar full of preservatives.   My husband’s comment “Now this looks healthy!”         
                        Tortellini in Cream Sauce
  1 1/2           Cups  Frozen Broccoli, Cauliflower and Carrots or Vegetables of Choice
  7             Ounces  Frozen Cheese-filled Tortellini or Ravioli
     3/4           Cup  Hot Water
     1/2      Teaspoon  Garlic -- minced
     1/4      Teaspoon  Dried Marjoram -- crushed
     1/8      Teaspoon  Pepper -- freshly ground
     1/2           Cup  Heavy Cream
     1/4           Cup  Parmesan Cheese -- grated

In a large skillet combine vegetables, frozen tortellini, water, garlic, marjoram, and pepper.  Bring to boiling.  Reduce heat.  Cover and simmer for 7 minutes.  Drain well. Return to pan. Stir in cream and Parmesan; heat through.
