We like
muffins with soups, and this one from "Taste of Home Soups” was quick
and easy on a busy day.  I usually cool
and freeze any leftovers, and we reheat them in the microwave, wrapped in a
paper towel or napkin, to fill out about any meal.  
I should
have crumbled my bacon a little more; the larger pieces made the tops of some
of my muffins not so pretty, but the flavor and texture are great.  I think muffins are one of the best uses for
baking mixes like these.
Busy Day Bacon
Muffins
  6        
Slices  Bacon -- diced
  2        
Cups  Biscuit-type Baking Mix
  2        
Tablespoons  Sugar
  1        
Large  Egg
     2/3 
Cup  Milk
Cook and
drain bacon according to package directions; drain.
Combine
biscuit mix and sugar in a large bowl. 
In a small bowl or measuring cup, combine milk and egg.  Stir into dry ingredients until just
moistened.  Fold in bacon.
Fill greased
muffin cups 3/4 full.  Bake at 400° for
13-15 minutes or until a toothpick inserted in the muffins comes out clean.
Yield:  1 Dozen
