Packwood Ladies Apple Salad
This is a little different apple salad from thePackwood Community Cookbook, contributedby Mrs. John Middlekoop. I made the recipe with cut up regular marshmallows, but would probably make it with mini marshmallows next time. I used cashews instead of peanuts because I had them on hand. You could use 3-4 cups of whipped topping instead of whipping cream.
Apple Salad 4 each Jonathan Apples 15 each Marshmallows 1 cup Salted Peanuts 2 cups Heavy Cream 3 tablespoons Powdered Sugar Cut marshmallows in fourths. Dice unpeeled apples, add the peanuts. Whip cream and sugar, mix all together. 8 – 10 servings
