Though they are called Lemonade cookies there is no lemonade in them. They have fresh lemon zest and lemon juice for the flavoring and are basically sugar cookies.
I think they would be pretty rolled in colored sugar and without the powdered sugar but either way they are a tasty not rich cookie to balance out all the rich cookies one bakes at the Holidays. This makes a small amount depending on the size of your balls. I double it and would recommend doing that.
Pink Lemonade Cookies
1/2 cup sugar
1/4 cup butter, softened
1 egg
2 teaspoons freshly grated lemon peel
1 teaspoon lemon juice
1 to 2 drops red food color (if desired)
1 cup all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Combine sugar, butter, egg, lemon peel, lemon juice and red food color in large bowl. Beat at medium speed; scraping bowl often, until creamy. Reduce speed to low and add flour, baking powder and salt. Beat until well mixed. Cover and refrigerate for 1 hour.
Shape dough into 1/2 inch balls (I used a cookie scoop, so mine are larger)
Roll in sugar, place on ungreased cookie sheets about 2 inches apart and flatten to 1/4 inch thick with a glass buttered on the bottom and dipped in sugar. Bake in 400 ° oven for 5 to 7 minutes. Cool and then sprinkle with powdered sugar if desired.
