Raspberry Bars

Made Raspberry Bars for another cookie today. The only problem with them is getting people to wait until they are cool. Best to bake them when you are home alone. Cut into small bars to eat as cookies as they are rich or larger bars to use as a dessert and serve with ice cream. Either way, easy, easy to make and a great cookie.

Old World Raspberry Bars

Rich, moist bars filled with raspberry preserves.

2 1/4 cup all purpose flour
1 cup sugar
1 cup chopped pecans
1 cup softened butter 
1 egg
10 ounces of raspberry preserves (I used Smuckers Jam)
Heat oven to 350°. In large mixer bowl combine all ingredients (except Jam) scraping bowl often; until well mixed (2 to 3 minutes). 
Reserve 1 1/2 cups  of the mixture; set aside. Press remaining mixture into greased 8” square baking pan. 
Spread preserves to within 1/2” of the edge. Crumble reserved 1 1/2 cups mixture over the top. It will go together as it bakes. 

Bake for 40 to 50 minutes or until lightly browned. Cool completely’ cut into bars. 
(mine usually take the 50 minutes)

Any of your favorite flavor preserves can be substituted for the raspberry
