In the 70’s, homemade bread was back on the scene, but plain bread was out of style. Sunflower seeds, wheat germ and other seeds and nuts were often added as part of the healthy natural-food trend. This recipe is just plain good, whether you like “health food” or not.
Sunflower Seed Bread
4 cups flour, all-purpose
3 tablespoons sugar
2 tablespoons butter
1 package instant yeast -- 2 teaspoons
1 tablespoon orange peel -- grated
1 large egg
1/2 cup milk
1/2 cup orange juice
2/3 cup sunflower seeds -- shelled
In mixer bowl, add all dry ingredients, except seeds. Heat milk and orange juice to 120-125° (use thermometer). Using flat beater, turn on and slowly add liquid until dough starts to form a ball. Add egg to mixer bowl. Change to dough hook, add seeds, and mix an additional 6 minutes or until smooth.
Let rest 10 minutes. Shape into loaf and place in greased 8 12/ x 4 1/2 " loaf pan, cover with sprayed wax paper, and let rise 25-35 minutes, or until 1-2 inches over rim of pan.
Bake bread in preheated 375° oven for 40 minutes or until instant read thermometer reads 190 °. If bread appears to browning too quickly, tent it with aluminum foil for the final 10 minutes of baking.
