My daughter, Amy, came over while I was trying to decide what to make from The Midwest Power Systems Holiday Delights 1992 cookbook and thought the recipe for Zucchini cookies looked good.
I am not a fan of zucchini and said if she wanted to try them it would be fine with me. As she had some zucchini on hand she said sure and made them the next day.
Everyone who tried them thought they were quite good so here is the recipe for them.
She did substitute Dates for the Raisins and that seemed to be a hit.
Zucchini Cookies
2 cups grated zucchini
2 cups sugar
2 cups sugar
1 teaspoon baking soda
1 cup oil
2 eggs
4 cups all purpose flour
2 teaspoons cinnamon
1 teaspoon salt
2 cups nuts
2 cups raisins (opt)
Thoroughly combine zucchini, sugar, soda and oil. Beat in eggs and add flour, cinnamon, salt, nuts and raisins. Drop by teaspoonfuls on greased cookie sheet. Bake in 375° oven for 12 to 15 minutes.
