"Land O Lakes Treasury of Country Heritage Meals & Menus” had this pretty, wonderful-tasting salad recipe. We like all of the ingredients, and it’s so easy to make I made it 10 minutes before lunch. Because it doesn’t need to be chilled, it’s good for a buffet. We liked it with grilled pork chops and steamed broccoli.
Pear and Walnut Salad With Blue Cheese
2 Tablespoons Olive Oil
1 Tablespoon Red Wine Vinegar
1 Teaspoon Dijon Mustard
1/4 Teaspoon Pepper -- coarsely ground
2 Medium Ripe Pears -- sliced 1/4" thick
2 Tablespoons Blue Cheese -- crumbled
2 Tablespoons Walnuts -- coarsely chopped
2 Tablespoons Fresh Parsley -- chopped
In medium bowl, stir together all ingredients except pears, blue cheese, walnuts and parsley. Add remaining ingredients; toss to coat.
