This timesaving recipe from the Farm Journal Timesaving cookbook was a big hit with my family. Also something I as a celiac, could eat. We decided we liked them better than just roasting potatoes on a cookie sheet with olive oil, etc. These are so good, once they are in the oven you do not need to do anything more to them and you could bake a meatloaf or other meat or vegetable along side and do a complete oven meal.
Oven Roasted Potatoes
½ cup butter
6 to 8 medium potatoes, peeled
½ tsp salt
Dash pepper
1 tsp paprika Opt.
2 tsp chopped parsley Opt,
Place butter in a shallow pan (13 x 9 x 2) Put in moderate oven 350°F. Until butter is melted.
Roll potatoes in melted butter. Sprinkle with the salt and pepper. Cover pan tightly with foil. Return to oven and bake 1 ¼ hours.
Put potatoes in serving dish and pour over butter from baking pan. Sprinkle with paprika and parsley if desired. Makes 6 servings.,
