Spinach and Pasta Salad


We thought this salad from "Land O Lakes Taste of Summer" was great…fresh, light and with excellent taste.  I used Cara Cara oranges because it looked so good, so serving this with salmon made a pretty pink and green meal!  Don’t leave out the green onion in the dressing; it gives it just enough bite.                  
Spinach and Pasta Salad
  4        Ounces  Farfele (bowties) -- or cavatappi
                        Dressing
     ½    Cup  Sour Cream
     ¼    Cup  Orange Juice
  2        Tablespoons  Green Onions -- chopped
  1         Teaspoon  Sugar
  1         Teaspoon  Orange Peel -- grated
                        Salad
  3        Cups  Fresh Spinach -- torn, lightly packed
     ¼     Cup  Pine Nuts -- toasted (or any other nuts)
  6         Slices  Bacon -- crisply cooked, crumbled
  1         Medium  Orange -- pared and sectioned
Cook pasta, rinse with cold water, drain.
Whisk together all dressing ingredients in a small bowl or measuring cup.
In a medium large bowl, combine all salad ingredients and 1/2 cup dressing; toss to coat.
