Apple Cake


  One apple left in the fridge. We could eat it, but I decided to make something with it. The Treasured Recipes cookbook had a few recipes for apple cake, bars, and this one used just 1 ½ cups chopped apple. 
  It, like many recipes in this type of cookbook is a little skimpy on directions. I will try to make it a little clearer for you. I served it warm with homemade ice cream, and then drizzled some lemon, powdered sugar glaze on the rest of the cake. 
  I must say, that it was better later in the evening after it had sat for a while. It is easy to mix together and uses ingredients you probably have on hand.
Apple Cake
1 cup sugar
1 ½ cups flour
½ teaspoon soda
½ teaspoon nutmeg
⅛ teaspoon cinnamon
¾ cup oil
1 egg
1 teaspoon vanilla
1 ½ cup chopped fresh apples
½ cup nuts chopped
  Mix sugar, oil and eggs till well blended. By hand add dry ingredients. Dough will be stiff. Add the sliced apples and chopped nuts. Bake in a well greased 8 inch square pan for 40 to 45 minutes. Check with a toothpick at 40 minutes. 
  Cool and serve with ice cream or whipping cream.
*You may drizzle with a powdered sugar glaze of powdered sugar and lemon juice or milk and vanilla.
