Rocky Road Freeze


This is an ice cream recipe you can make successfully without an ice cream maker.  It’s not too sweet or chocolaty, but full of goodies.  When I tried this in my ice cream maker, I added ½ cup of milk to get a consistency that would work.  It was still delicious and creamy.  When my niece Amy made this in her ice cream maker she used half and half instead of the heavy cream to get the right consistency for an ice cream maker.  We both liked the combination of salted nuts with the sweet marshmallows and chocolate.                   
Rocky Road Freeze
  14            Ounces  Sweetened Condensed Milk -- 1 can
     ½         Cup  Chocolate Syrup
  2              Cups  Heavy Cream
  1              Cup  Miniature Marshmallows
     ½         Cup  Miniature Chocolate Chips
     ½         Cup  Peanuts -- Salted
In a small bowl, combine the milk and chocolate syrup; set aside. In a mixing bowl, beat cream until stiff peaks form.
Fold in chocolate mixture, marshmallows, chocolate chips and peanuts. Transfer to a freezer-proof container; cover and freeze for 5 hours or until firm.
Remove from freezer 10 minutes before serving
YIELD: 1 ½ quarts
8 Servings
To try in your ice cream maker; add 1/2 cup milk to the mixture or use half and half instead of heavy cream, and freeze following your ice cream maker directions.
