Here’s an
easy fried rice recipe that is very much like our favorite Midwestern Oriental
restaurant’s – obviously for Midwestern tastes.
It is, however, simple to make and tastes good too. Even picky eaters and young children will
enjoy this. The brown rice adds a nutty
flavor, but regular rice would be good too.
Vegetarian Fried Rice

Cups Cooked Brown Rice
1/2
Cup Fresh Mushrooms -- sliced
1/2
Cup Carrot -- shredded
1/4
Cup Green Onion -- sliced
1/4
Cup Green Pepper -- chopped
1/4
Teaspoon Fresh Ginger
1
Teaspoon Garlic -- minced
2
Tablespoons Soy Sauce
2
Large Eggs -- beaten
1/8 Teaspoon
Pepper

Cup Frozen Peas -- thawed
While rice
is cooking, brown mushrooms, carrot, onions, bell pepper, ginger and garlic in
olive oil (or use cooking spray); cook and stir one minute.
Reduce heat
to low. Stir in cooked rice and soy
sauce; cook 5 minutes, stirring occasionally.
Push rice
mixture to side of the skillet; add eggs and pepper to other side.
Cook over
low heat for 3-4 minutes; stirring constantly until eggs are cooked.
Add peas to
the rice and egg mixture; stir gently to combine. Cook until thoroughly heated.
