I had a coupon for the new Campbell Cooking Soups in a carton and decided to try this recipe that is on the box (for now) for a young friend who is just getting started on cooking. The recipe looked good and very basic and a easy and quick meal to get. Much better than a frozen TV dinner at least, or fast food drive through. Both Lyle and Bettie thought they were excellent and worth making again and I liked the ease of preparation and cleanup.
Meatloaf Express
1 ½ pound lean ground beef
1 cup plain dry bread crumbs
1 egg beaten
1 carton (14.5 ounces) Campbell’s Sweet Onion Soup
Heat oven to 400°F. Throughly mix the beef, bread crumbs, egg and ¼ cup of the soup in a large bowl. Season with salt and pepper if desired. I did not add salt but did add pepper.
Shape the beef mixture into 6 small meatloaf shapes. Place into a 13x9x2 inch baking dish. Pour the remaining soup over the meatloaves.
Bake for 25 minutes or until the meatloaves are cooked through. This gives you some sauce in the pan to use over potatoes or rice or noodles. Easy and quick for beginners and more experienced cooks who are short on time.
I've never heard of the Sweet Onion Soup, does it come in the normal red label cans? TIA
ReplyDeleteNo, it comes in a carton similar to the stock cartons although smaller. There are a few other varieties also.
