Family Favorites...Spinach Turkey Burgers

These turkey burgers are excellent.  They are good both in buns or for less calories, simply grilled or browned in a pan to serve with a side of vegetables.  They are simple to make and cook up quickly.  The seasonings and stuffing mix takes them out of the bland category.  I served them on Whole Wheat Mustard Buns.             
Spinach Turkey Burgers
  1            Cup  Stuffing Mix -- finely crushed
     1/3     Cup  Chicken Broth
     1/2     Teaspoon  Italian Seasoning
     1/4     Teaspoon  Salt
     1/4     Teaspoon  Pepper
  5            Ounces  Frozen Chopped Spinach -- thawed and squeezed dry
  1            Pound  Ground Turkey
  4            Each  Sandwich Buns
                Cheese, Lettuce and Tomatoes -- optional
Combine stuffing mix, broth, Italian seasoning, salt and pepper and the spinach.  Crumble turkey over mixture and mix well.  Shape into four 3/4" thick patties.
Grill, uncovered, over medium-hot heat or broil 3-4 inches from the heat for 3-4 minutes on each side or until juices run clear.
Serve on buns with cheese, lettuce and tomato if desired.

  1. This sounds so promising Sue. I looked for the cookbook which contains the Whole wheat Mustard Buns, Simply from Scratch, and there is more than one with that title. Who is the author? Thanks, Toni Cunningham

      The Simply from Scratch cookbooks are a series of 3 of the little Pillsbury cookbooks. They are from 1983...but surprisingly, didn't use many mixes in the recipes, which is why Myrna and I like them. I picked up all of them at used book sales around here - you often see these little books at flea markets and yard sales too; as well as thrift stores. Of course, you can see if you can turn them up used online too.

Put Simply from Scratch in the Search our files...box on the sidebar and you will find a few more recipes that we tried from this series. They are some of the only Pillsbury booklets that I have kept over the years.

    3. Well, I make these buns often...they have become one of our favorites...I cool and slice them and freeze the extras for a quick meal anytime. I did change the original recipe method to use the advantage of instant yeast so its quicker but just as good!

  2. I'm not sure many folks use boxed stuffing, but I mix a box of cornbread dressing per instructions, let it cool, and then add 1 lb shredded cooked chicken, and one or two eggs. I make about 8 patties, brown them in a little oil or butter until golden and cooked thru (the egg/s). I serve these with gravy, mashed taters and vegies. I just love the flavor. I know it isn't quite the same, but it is a very fast meal to put together and they freeze well.
