Grandma had the right idea about how to stretch meat to feed more
people. In this recipe, 4 ounces of ham
and 2 eggs make enough generously-filled sandwiches for four.
I always buy
“no water added” ham for extra flavor, and I think that homemade cooked
dressing makes this salad even more special.
The ingredients are simple but delicious and I always have them on
hand. I usually cook my eggs and
dressing the evening before I plan to use them. Use any leftover dressing for anything you would use mayonnaise in, it keeps several days in the refrigerator.

Dressing recipe from "Betty Crocker Good and Easy 1954 or

Hi Sue,
ReplyDeleteI came across your blog looking for recipes from Betty Crocker Good and Easy Cookbook. I love you and your sister's simple living philosophies and have many of the same values. I am 23 but feel as though I should have grown up in a different era. Alas, Jesus put me in this generation for a reason, and I will choose the way 'I' want to live, not what society dictates. Blessings from CA, Nicole Reynolds
Hi, Nicole,
DeleteGlad to have you with us...hope you'll follow along.
As to our philosophies, it took us a little while to get here, and we have the support of our families who live like we do.
We are not Amish or Mennonite, although we admire them, we just like being more self-reliant, as our parents and grandparents were.
Love Ham salad sandwiches. Only difference compared to your recipe is that I put in some sweet / pickle relish or finely diced sweet pickles.
ReplyDeleteYour cooked dressing sounds interesting I will have to make / try it out soon.
Thank you
Temperature in Texas this week......Triple digits :{
Well, I like pickle relish too, but I was surprised that this simpler recipe tastes so good.
DeleteYou should try the cooked dressing...it is fairly low calorie and very easy to make.
The taste is so much better than purchased dressings it's hard to believe.
That's interesting about the cooked dressing. I never think to make something like that. It's been a long time since I've had any form of ham salad so I want to try this. Your post made me smile...I remember once when times were tough, Mom made "bologna salad" just like ham salad. We kids all liked that version better!
ReplyDeleteOur Mom made bologna salad also. As I remember it was pretty good.
DeleteI am slowly working my way through all of your recipes that I have bookmarked, they are all delicious. but this was great! That cooked dressing will make its way into my rotation as a salad dressing for lettuce salads as well.
ReplyDeleteGlad you tried the dressing, I never ever buy commercial mayo or Miracle Whip anymore.
