Rhubarb Raspberry Pie

 I made this rhubarb pie with rhubarb from my small plot and did not have quite enough for the recipe. I did however, have some raspberries I had just picked so decided to make it a rhubarb raspberry pie. Our daughter is fond of strawberry rhubarb pie so she thought this was very good, she won’t eat just rhubarb alone in a pie.
 I did a little research for a recipe and than used the rhubarb recipe I usually use with the addition of the raspberries to replace the amount missing. Worked so well that when I have that combination again I will make this recipe. It is not as sweet as the strawberry rhubarb pie but we all like it a tad on the tart side so that was fine.There is usually a way around most kitchen problems. You just need to stop and think and not give up. That's how our folks came up with a lot of the recipes we grew up with.
Rhubarb Raspberry Pie
3 cups sliced Rhubarb
1 cup fresh raspberries
1 1/2 cups sugar
1/4 cup flour 
3/4 teaspoon nutmeg
3 eggs slightly beaten eggs
½ teaspoon grated lemon rind optional 

In medium bowl, combine 1 1/2 cups sugar, 1/4 cup flour, and 3/4 teaspoon nutmeg. Beat in 3 slightly beaten eggs. Add 3 cups sliced rhubarb and 1 cup raspberries.  Line a 10 inch pie plate with pastry. Pour in the filling. Dot with 2 tablespoons of butter. Top with a lattice crust and bake in a 400 ° oven 50 to 60 minutes

  1. Looks good! I don't normally think raspberry with rhubarb, but sounds good. My rhubarb is very scanty this year, we had a couple hail/wind storms that shredded their leaves. Next year!

    1. I transplanted my rhubarb since this pie so had to quit picking it this year. It is doing quite well in its new bed so hopefully more pie next year. The raspberries were very good with this pie. Yours should come back another year? I am assuming it is a bed you have had for awhile.

  2. Surely you didn't eat any! Don't you dislike rhubarb? I do too. But I love raspberries so maybe I'll try this.

    1. No Chuck, I didn't eat any though I really do like rhubarb, just can't have the gluten in the wheat when it is in a pie. However I can have rhubarb as a sauce, etc. If you don't like rhubarb I wouldn't try this as it really tastes more of rhubarb than raspberries.

    2. No I really don't like rhubarb at all. I have only eaten a piece of rhubarb pie once, several years ago. I was visiting my grandfather's cousin (age 92) and she had made a homemade rhubarb pie. I forced myself to eat a piece and told her it was great because hey, when a 92-year-old makes you a homemade pie, you eat it!

    3. Hey Chuck, Your right even if you don't like it. The custard type of rhubarb pie that this pie is will not be as tart but still not for rhubarb haters. I had to laugh as I just made another rhubarb pie Saturday and not a piece is left.

  3. Oh, Yum. I love Anything with Rhubarb but not able to grow it here in Texas :{.......Too hot in the summer and not cold enough in the winter for rhubarb to grow and believe I have tried.
    When I lived in Iowa many, many years ago I had a big rhubarb patch. I froze a lot and had lots to share with neighbors and family
