We love
waffles…and these cornbread waffles are easy, quick and delicious. Use your homemade or purchased biscuit mix
for a fast start.
We like them
topped with chili…I used my “HamburgerMix Chili and Beans”, so another part of the meal was easier too. If you wish, top the chili with shredded
cheese and/or sour cream. Of course, these waffles are also delicious with syrup, like sorghum or molasses.
Cornbread Waffles
1 1/2 cups
Biscuit Mix -- about 6 ounces
1/2 cup
cornmeal
1 1/3 cups
milk
2 tablespoons vegetable oil
1 egg
Heat waffle
iron. (Waffle irons without a nonstick coating may need to be brushed with
vegetable oil or sprayed with cooking spray before batter for each waffle is
added.)
In medium
bowl, stir waffle ingredients with spoon until blended. Pour batter onto hot
waffle iron. (Check manufacturer's directions for recommended amount of
batter.) Close lid of waffle iron.
Bake 4 to 5
minutes or until steaming stops. Carefully remove waffle. Repeat with remaining
batter. Serve waffles with syrup or top with chili.
