For a one pan meal you might try this recipe for roasted chicken thighs, new potatoes seasoned with lemon, garlic and oregano. I found several versions on the internet and used a combination of them. We all thought it was quite good and the chicken was tender and had a good flavor. I think you could use thyme or Italian seasoning with this instead of the oregano for a different flavor. Vary the amount of lemon according to your taste, we found a half lemon worked well with about a pound and a half of chicken which is what my three thighs weighed. I used a pound of new Yukon Gold potatoes which worked for the three of us.
Lemon Roasted Chicken Thighs and Potatoes
Serves: 2-3
INGREDIENTS
1 pound chicken thighs
1 pound early potatoes cut in half or quarters if larger
Juice and zest of ½ lemon (or to taste)
1 tsp dried oregano
salt, pepper to taste
3 garlic cloves peeled and smashed
¼ cup olive oil
½ cup chicken broth
INSTRUCTIONS
In a large bowl, mix lemon juice, lemon zest, oregano, salt, pepper, garlic and olive oil; add chicken and potatoes and toss until coated with mixture. Place Chicken and potatoes in a sheet pan with a rim. If you want extra lemon flavor add the lemon half you juiced to the pan. Add chicken broth, cover with aluminum foil and bake for 20 minutes in 375 F oven.
Uncover and raise temperature to 390 F and bake for 25-35 minutes or until chicken and potatoes are done.
Put under broiler for 3-5 minutes or until golden.(optional)
