Pork Chops with Mushroom Pan Gravy from the Land O Lakes cookbook is a good recipe and easy to make. I did add a splash of Dry Sherry to the gravy. We decided the next time, to use pork steak, just because we like it better. I would add slightly more cooking time to the meat when it is covered if using pork steak instead of chops. Serve with brown rice, mashed potatoes or white rice. There is no flour in the gravy as the half and half will thicken nicely on its own.
Pork Chops with Mushroom Pan Gravy
Serve tender pork chops over rice, then top with lots of traditional pan gravy
6 slices of bacon, cut into 1/2” pieces
2 cups (2 medium) sliced 1/8” thick onions
4 3/4” thick center cut pork chops
3 Tbsp all purpose flour or GF flour
1/2 tsp salt
1/2 tsp dried thyme leaves
1/2 tsp pepper
2 cups half and half
2 cups sliced fresh mushrooms

Cooked Rice
In 10” skillet cook bacon and onions over medium heat, stirring occasionally until browned (8 to 10) minutes. Saute the mushrooms for a few minutes and than remove to a plate to add later. Add pork chops to pan; arranging bacon and onions on top of pork chops. Cover; continue cooking for 10 minutes or until browned. Turn pork chops. Reduce heat cover again and cook until pork chops are tender. Place pork chops on platter; keep warm while preparing gravy. In same skillet with drippings, brown bits, bacon and onions add the remaining ingredients except half and half, sauted mushrooms and rice. Cook until smooth and bubbly ( about one minute). Stir in half and half and mushrooms. Continue cooking, stirring occasionally until mixture is thickened (about 8 minutes). Serve gravy over rice and pork chops.

DeleteI had the chops out & ready to prepare one evening last week, but then my hubby got sick. I simply cooked them plain and put them back in the freezer. Do you think I can use this recipe to finish cooking them when I do make a meal with them? I thought maybe in a roaster. Thanks!

I sure would give it a try, I would just reheat them slowly in a pan and finish as the recipe calls for. Cook the onions and bacon and put on top of the pork chops while they are reheating.We had several ill for Christmas eve but had a nice part of a day on Christmas.

Not sure how cold it is in Minnesota, but cold here. Below zero tonight and pretty much the same the rest of the week and into next week.
DeleteI think grass & warmer weather is just fine too! MN has been in the -20 to -30 for most of the state. I remember one year it was below zero for a whole month in the late 70s. We had snow for Christmas & colder weather than usual (single digits with wind chill) but we'll see 30s & 40s all week and 51º on Fri! Yay!!! Stay warm!
DeleteThere's just something about these chops. I'm going to try again to make them tomorrow. The first time I was going to make them my hubby got sick. Had to cook them plain & throw them back into the freezer. I had planned to make them again last night, but ended up spending 5 hrs (3:30-8:30) with an acquaintance taking her to the clinic and then to ER. Thought I'd make them tonight, but hubby is home & will fry fish instead. So...maybe...tomorrow?! There's just something about these chops that won't let me try this recipe! lol

We had freezing rain Sun night followed by 4" snow through Mon morning, but that's going away. Thankfully it's the end of January, so winter will be over soon.

DeleteWe have been lucky in this last go around as the snow stayed North of us. Crazy weather for sure this year. Supposed to get to 50° tomorrow, the poor plants don't know what to do anymore.
