Instant Pot Pork Roast


Pressure cooked pork roast such as a rolled shoulder or Boston Butt will be tender in 45 to 50 minutes as opposed to 2 to 3 hours in a low oven. We all like Boston Butt which is what I buy and doing it in the Instant Pot sure speeds up the cooking time.
 Brown and tender with your favorite seasoning you have a easy fast meal to feed your family. I use smaller size roasts so use the lower time, if you want it for pulled pork I would leave it in for 70 minutes. If you want to use a loin roast check your manual for cooking time as it will be shorter.
 Instant Pot Pork Roast
3 pound Boston Butt or rolled shoulder pork roast
1 ½ cups of liquid, water, stock or a mix of stock and apple juice
Salt, pepper and seasoning of your choice, I use caraway seeds with apple juice

Salt and pepper roast. Add 2 tablespoons of oil to pot, set to sauté. Brown roast on all sides. Turn pot off and remove roast and pour off excess oil. Add liquid of your choice to pot. Stir the brown bits from bottom of pot, place rack or trivet in pot, place roast on it and add any additional seasonings you want to use.

 Lock lid in place, place on seal not vent, and turn to manual. Set timer to 45 to 50 minutes and let cook. When timer beeps, let pressure come down manually, remove lid. Take pork roast out and place on cutting board. Let sit covered with foil for 5 to ten minutes. Meanwhile, turn to sauté and thicken liquid in pot if desired. Slice pork roast and serve.
