Martha's Simple Basic Buttercream Frosting


 For a simple basic buttercream frosting try this one from Martha Stewart. You can use the flavoring of your choice to vary it and it makes a large amount if you like a lot of frosting on your cake or cupcakes. I usually make half of the recipe as we don’t like as much frosting on ours. Do beat on medium after adding confectioners sugar so it does not go flying out of your bowl than raise the speed as directed in the recipe. Martha Stewart Buttercream Frosting
YIELDS   4 cups
INGREDIENTS
3 sticks unsalted butter, softened
1 pound confectioners' sugar, sifted
1/2 teaspoon pure vanilla extract
Food coloring (optional)
PREPARATION
1. Beat butter with a mixer on medium-high speed until pale and creamy, about 2 minutes. Reduce speed to medium. Add sugar, 1/2 cup at a time, beating after each addition, about 5 minutes. (After every 2 additions, increase speed to high, and beat for 10 seconds, then reduce speed to medium).

2. Add vanilla, and beat until buttercream is smooth. Use immediately, or cover and refrigerate for up to 3 days. (If refrigerated before using, bring to room temperature, and beat on low speed until smooth.)

    1. Not too bad if you don't use more frosting than there is cupcake, which seems to be the trend now days. Any frosting is fattening I am afraid. What a shame! This really is a very good and versatile frosting.
