With Almond Bark and with Chocolate |
Need a treat to munch on that is tasty, not spicy, and easy to make? Try this when the urge hits. A friend in the nursing home had some she had gotten as a gift and wanted some more and I had purchased some popcorn called Tiger Popcorn which has chocolate and white chocolate drizzled on so using that as a example I tried it with the Almond Bark and melted chocolate chips.
Melting the bark in a double boiler works well as you don’t have to worry about it scorching or burning. I have had it scorch when doing it in the microwave. If you don’t have a double boiler use a glass bowl suspended over a pan of simmering water.
Really not a lot of work and the pans wash up well in hot water though I do put parchment paper in the bottom of the pans so it is easier to remove the cooled popcorn puffs.
Even cereal like chex would work if you don’t like popcorn. However the original was made with the the corn puffs and that is what I did with this.
Corn Puffs with Almond Bark & Chocolate
Puff Corn Regular size bag (3.5 ounce)
1 20 ounce package Almond Bark
¼ to 1/3 ounce chocolate chips or semisweet square
Directions
Melt almond bark in top of double boiler or in Microwave, keeping a close eye on it if using microwaves so it doesn’t scorch. Place puff corn in large container, bowl. Pour melted bark over and stir well to cover. Pour puff corn out on cookie sheets lined with parchment or foil and allow to cool.
Mean while melt chocolate over hot water till runny. If to thick try adding a small amount of shortening like Crisco to thin, using a very small amount at a time.
Drizzle over puff corn and place pans in refrigerator to set the chocolate.
Simple enough.
