Waldorf Chicken Salad

  Today’s recipe from the Southern Living best comfort food recipes is for the Waldorf Chicken Salad. I have made chicken salad with red grapes, and nuts before, but this is the first time I have used an apple in it. A nice addition and we all liked it. 
  I did sprinkle the diced apple with a little lemon juice. The recipe does not call for this, but I think the apples would brown and it did not change the flavor any, maybe made it a little better. I thought there was a little too much mustard, but was voted down. All in all, a good easy recipe and it made a light lunch. We just had it with chips, but hot muffins or rolls would be very good with this. Green grapes are another option.
Waldorf Chicken Salad
½ cup chopped walnuts or pecans (more would be better)
3 cups chopped cooked chicken
1 cup seedless red grapes, halved 
1 large Gala apple, diced
1 cup diced celery
½ cup mayonnaise
½ cup honey mustard
Salt and pepper to taste
1. Preheat oven to 350°. Bake walnuts in a single layer in a shallow pan 6 to 8 minutes or until toasted. (I used a small saute pan on a stove burner med. heat until they smelled fragrant)
2. Stir together chicken and next five ingredients and walnuts. Add salt and pepper to taste.
