Sesame Chicken (Gluten Free)

    I had some great fresh chicken tenders from our local Fareway meat counter and wanted to do something different with them. One of my and Susan’s favorite cookbooks, the Land O Lakes Heritage cookbook had this quick to fix recipe for Skillet Sesame Chicken. Great recipe, fast, tasty, and a pound of chicken tenders worked just right for the three of us. This is gluten free, if you check your oil and other ingredients. I would not use Sesame oil for the gluten free version.
  The amusing footnote on the page went like this; “When the threshers came, a farm woman made breakfast, dinner, lunch and supper for 15-20 men for two to three days. Her chicken recipes started….. First catch and clean ten chickens,”
Skillet Sesame Chicken
3 tablespoons sesame or salad oil
1 teaspoon finely chopped fresh garlic
2 whole boneless chicken breast, cut in half (I used a lb of chicken tenders)
1 tablespoon sesame seed, toasted
¼ teaspoon ground pepper
⅛ teaspoon red pepper flakes
2 tablespoons chopped fresh parsley (opt)
  In 10inch skillet heat oil over medium high heat; stir in garlic. Place chicken in hot oil. Cook, turning occasionally, until golden brown (8 to 10 minutes). Sprinkle with sesame seed, pepper and red pepper flakes. Continue cooking until chicken is fork tender (1 to 2 minutes). Sprinkle with parsley if using.
