"Deseret
Recipes" has a lot of recipes that use common ingredients in different
ways – this recipe is one of them. It’s
a pretty, delicious salad that you could add to your table about any time of
the year. 12 grams of fiber! And it tasted good too. You could use Homemade cooked dressing and leave out
the bacon for a lower fat, lower-sodium recipe; I don’t think you would
actually miss the bacon. Who says Grandma
didn’t understand good nutrition; you can find recipes like this one in many
older cookbooks.
Kidney Bean Bowl
2
cups Kidney Beans -- cooked or
canned, drained, rinsed
1/2
cup Celery -- chopped
1/4
Cup Onion -- chopped
1/4
teaspoon Salt
3
tablespoons Mayonnaise -- or Salad Dressing
1
large Apple -- diced, do not peel
1/3
cup Cheddar Cheese -- diced
4
slices Bacon -- crisp cooked,
crumbled

Lettuce Leaves (optional)
Combine
beans, celery, onion and salt. Stir
gently to moisten with salad dressing.
Cover and chill 1 to 2 hours.
Stir in
apple, cheese and bacon. Serve in
lettuce leaves, shaped into cups, if desired.
