Creamy Cucumber Dressing


We like this delicious salad dressing that I found in the book Practical Produce, which I purchased in an Amish grocery. I love this book; it covers most common vegetables, tells you how to grow it, how to preserve it and gives plenty of recipes to use them.

Creamy Cucumber Dressing
1 Cup Sour Cream
1/2 Cup Cucumber -- chopped and seeded
2 Teaspoons Dried Dill Weed
1 Tablespoon Onion -- minced
1 Tablespoon Lemon Juice
2 Teaspoons Sugar
1/8 Teaspoon Garlic Salt
Chop cucumber and mince onion. Stir together in 2 cup measure with lid; cover and refrigerate overnight to blend flavors.
Yield: "1 1/2 Cups"

  1. The co-author of this book, Elsie Hoover, recently passed away on July 24th due to breast cancer. Her family posted a nice biography of her on their site at homesteadpublishers.net. Altough I do not know her age, but from reading her bio she seemed to be about 52 years old and still had children at home. May she rest in peace and may God have mercy on us all and especially for her family who are devote Mennonites in Stratford, WI.
