Coconut Wheatie Cookies

These cookies were made by my daughter especially for Bettie. (Thanks Amy). They are photographed on her Mother’s dishes as the recipe is from the Packwood Iowa cookbook 100 Years of Down-Home Cooking In Packwood. The recipe is in honor of Mrs (Carl) Mary Jo Mitchell. The cookies were made often by Bettie’s mother and she has fond memories of them. Her Mother used them as a way to get her to eat breakfast when she was a teenager.
The Dishes are a unique pattern being a Netherlands scene. It is the Universal Netherlands Pattern. 
Coconut Wheatie Cookies
1 cup Brown Sugar
1 cup white sugar
1 cup Shortening
2 eggs
2 cups flour
1 cup coconut
2 cups wheaties
1/ 2 teaspoon baking powder
1 teaspoon baking soda
Pinch of salt
Mix well and drop by spoonful on greased cookie sheet.
Bake 10-15 minutes in Moderate oven 350 ° 
and cool on rack
