These are what I would call a coffee house muffin. You know, the kind you can buy at your favorite coffee shop. They are good, but not the type of muffin you would serve with a meal.
We had them with coffee on a Sunday afternoon and everyone enjoyed them warm from the oven.
Remember one of the things with muffins is to not over mix them. They will have a few lumps in the batter, mix just until the dry ingredients are all moistened. Over mixing cause tunnels and they do not rise as nicely.
Nutmeg Streusel Muffins
Streusel Mixture
1 1/3 cup all purpose flour
1 cup firmly packed brown sugar
1/2 cup butter
Muffins
2/3 cup all purpose flour
1 1/2 teaspoon baking powder
1 1/2 teaspoon nutmeg
1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup buttermilk
1 egg
Heat oven to 400°. In large bowl combine the streusel ingredients and cut in the butter.; until crumbly. Reserve 1/2 cup for the topping.
In the same bowl add all the muffin ingredients to streusel mixture. Stir just until moistened. Spoon into greased 12 cup muffin pan. Sprinkle with reserved streusel mixture. Bake for 18 to 22 minutes or until lightly browned. Let stand 5 minutes; remove from pan.
