Crunchy Potato Bites


This is a somewhat less expensive homemade appetizer that looks nice on your hot tray, and tastes good too.  I have used Cheddar cheese instead of Swiss cheese in this recipe from the "Southern Living Big Book of Christmas Baking” with good luck. 
I have prepared these appetizers on a baking sheet; and covered and  refrigerated up to 24 hours, baking right before the party.  Finely chop the ham and green pepper in your food processor.  Crush the corn flakes in a plastic bag, and use a cookie scoop to portion the balls to keep it simple.                 
                           Crunchy Potato Bites
  1         Cup  Potatoes -- cooked, mashed
  1         Cup  Ham -- cooked, ground
  2         Ounces  Swiss Cheeses -- shredded
  2         Tablespoons  Green Pepper -- chopped
  3         Tablespoons  Mayonnaise
  1         Teaspoon  Mustard -- prepared
     1/4  Teaspoon  Hot Sauce
  1         Large  Egg -- lightly beaten
  1         Cup  Corn Flakes -- crushed
Combine all ingredients except corn flakes.  Shape mixture into 1 inch balls, coat with crushed cornflakes.  Place on lightly greased baking sheets.
Bake at 350° for 30 minutes.  Serve warm.
