Plum cake with cinnamon sugar topping


  One of our favorite coffee cakes is this recipe for Plum coffee cake. I have been making it for several years and it works well with either red or black plums. Quick to put together and it is not too sweet. Good either warm or cold. 
Plum Cake with Cinnamon Sugar Topping
1 ¼ cups all purpose flour
1 teaspoon baking powder
¼ teaspoon salt
½ cup (1stick) butter softened
¾ cup sugar
2 large eggs
1 tablespoon fresh lemon juice
1 teaspoon grated lemon peel
5 large plums (about 1 ¼ pounds) pitted, cut into ½ inch wedges
 Topping
1 ½ tablespoons sugar
¼ teaspoon cinnamon
  Preheat oven to 350°F. Butter a 9 inch diameter springform pan. 
  Pit and slice plums and mix cinnamon and sugar. (they need to be ready, so your batter doesn’t set too long before going in the oven).
  Whisk first 3 ingredients in small bowl to blend.
Using electric mixer, beat butter in large bowl until fluffy. Beat in the ¾ cup sugar. Add eggs, one at a time, then lemon juice and peel; beating until blended.
  Stir in flour mixture. Spread batter in prepared pan.
Press plum wedges halfway into batter in circles, spacing slightly apart.
  Sprinkle with the sugar and cinnamon.
Bake until cake is browned on top and tester inserted into center comes out clean, about 40 minutes. Run knife around sides of pan and release pan sides. Serve warm or room temperature
