Easy Coconut Custard Pie


We like coconut so we had to try this recipe from "Land O Lakes Best Loved Recipes".  It actually forms a pie crust at the bottom of the pie plate that is very much like regular pie crust!  It’s so easy; I just mixed it in a 2 quart measure with my egg beater and poured in the prepared pie plate.  We liked it better cold.                     
          Easy Coconut Custard Pie
  2        cups  Milk
  1        cup  Coconut -- flaked
     ¾    cup  Sugar
     ½    cup  Flour, All-purpose
  3        tablespoons  Butter -- melted
  4        large  Eggs
  1        teaspoon  Vanilla Extract
            nutmeg
Heat oven to 325°.  In 5 cup blender container, place milk; add all remaining ingredients except nutmeg..  Cover and blend at medium speed until well mixed (1-2 minutes).
Pour into greased and floured 9" pie pan; sprinkle with nutmeg.  Bake for 30-45 minutes or until knife inserted in center comes out clean.. 
Serve warm or chilled garnished with fresh fruit.
