Cranberry Mallow Dessert


   For a quick, light Holiday dessert, this recipe for Cranberry Mallow Dessert from Taste of Home will fill the bill. It was very easy to put together and would be easy to double for a crowd. Our family ate all of it, eating at it off and on, through out the day. It makes a pretty, festive dessert and a nice potluck dish.
Cranberry Mallow Dessert
Prep/total time: 5 minutes
1 can whole berry cranberry sauce
2 cups miniature marshmallows
1 can (8 ounces) crushed pineapple, drained
1 teaspoon lemon juice
2 cups whipped topping (it will hold up better than whipped cream)
  In a large bowl, combine the cranberry sauce, marshmallows, pineapple and lemon juice. Fold in whipped topping. Transfer to a serving dish. Cover and refrigerate until serving.
YIELD: 6 - 8 servings.

  1. I thought this dessert sounded cool and refreshing (and easy!) so I whipped it up tonight. Unsurprisingly, it was very good--light and delicious! I think that the next time I made it, I would serve it in a graham cracker or cookie-crumb piecrust, with extra crumbs sprinkled over the top of the cranberry mallow.

    1. Ease of preparation was the first reason I tried this recipe. Sounds good in a crumb crust. What about a pretzel crust the salty would go well with this I think.

    2. My goodness YES--a pretzel crust would be amazing! And then it can be made gluten-free as well.
      My whole family loves the Snyder's of Hanover gluten-free pretzel line. Personally, I think they taste better than any other pretzels out there--gluten free or not.

    3. YES, these are the pretzels I buy for myself and hide away. As a celiac it is great to have good GF pretzels.
      Let us know if you try this, I might have to try it for myself, but you know, so many recipes and so little time. lol
