Sautéed Asparagus With Bacon

I used to get in trouble with our Grandma for wanting to pick asparagus for lunch after it should be left to grow for next year.  That’s how much I love it…so I couldn’t help making the asparagus recipes from "everyday food".  I used my wok for this dish.
Asparagus is an old homestead vegetable - once established, it comes back every year with minimal care.
Sautéed Asparagus With Bacon
2       Slices  Bacon -- cut in 1" pieces
  2       Bunches  Asparagus -- 2 pounds, trimmed
  2       Teaspoons  Dijon Mustard
  3       Tablespoons  Fresh Parsley
In a large skillet, cook bacon over medium, stirring occasionally, until browned and crisp, 8-10 minutes.
With a slotted spoon, transfer to paper towels to drain.
Add 2 bunches asparagus, trimmed and cut in 1" pieces to skillet and season with coarse salt and pepper.  Cook, stirring, until asparagus is tender, about 10 minutes.
Remove from heat and stir in bacon, Dijon mustard and fresh parsley.
