Yogurt Fruit Salad


This salad from the “Taste of Home Farmer's Market Cookbook” is light, fresh and delicious.  It is certainly easy, too.  That said, I thought it was a very expensive recipe with what I consider “luxury” ingredients.   I purchased my cherries and nuts from Costco at a good price, but if you have to buy all the ingredients it isn’t cheap.   Be sure you buy your ingredients in season to make this the best and most economical.    
Yogurt Fruit Salad
  2                Large  Apples -- chopped
  1                Cup  Green Grapes -- halved
  1                Cup  Peaches or Pears -- peeled, sliced
  1                Cup  Dried Cherries
     ¼            Cup  Coconut -- flaked
     ¼            Cup  Walnuts -- chopped
     ½            Cup  Vanilla Yogurt
  6               Lettuce Leaves
Combine the first 6 ingredients in a large bowl.  Add the yogurt; toss to coat.  Serve on lettuce.

Per Serving: 175 Calories; 5g Fat (25.0% calories from fat); 3g Protein; 32g Carbohydrate; 3g Dietary Fiber; 3mg Cholesterol; 15mg Sodium.  Exchanges: 0 Grain(Starch); 0 Lean Meat; 0 Vegetable; 2 Fruit; 0 Non-Fat Milk; 1 Fat; 0 Other Carbohydrates.

  1. I make a similar salad with red grapes, apples, canned mandarin oranges and vanilla yogurt. The only thing we don't normally have in the house is the grapes, so this is my go-to salad for rounding out an otherwise bleak meal. :) I love your recipe reviews and and so glad that I discovered your blog!
