Here’s a pretty salad from "Land O Lakes
Occasionally Vegetarian” that has everything we like in it! Delicious cheese filled tortellini, crisp
broccoli, pretty red onion, blue cheese (I had some extra-good Gorgonzola) –
and a simple dressing. I didn’t have any
Savory and used garden parsley instead. Fruit or mixed tomatoes on the side – yes!
Tortellini, Broccoli and Blue Cheese Salad
Tortellini, Broccoli and Blue Cheese Salad

ounces Cheese Tortellini -- fresh
1
cup Broccoli Flowerets -- bite
size
1/3
medium Red Onion -- sliced,
separated into rings
1/4
cup Blue Cheese -- crumbled
2/3
tablespoon Fresh Savory --
chopped
Dressing
1/3
cup Olive Oil
1/4
cup Red Wine Vinegar -- or cider
vinegar
Salt and Pepper -- to taste
Leaf Lettuce
Cook
tortellini according to package directions; adding broccoli during last 1
minutes of cooking time. Rinse with cold
water and drain.
Meanwhile,
prepare dressing in jar with a tight fitting lid.
In medium
bowl, combine tortellini, broccoli, onion rings, blue cheese and savory. Pour dressing over and toss gently. Refrigerate until ready to serve.
Serve on
lettuce lined plates.
