This is
another delicious way to use fresh or frozen pea pods and red peppers. I really like the ginger in a tube that you
can purchase, usually in the salad section at the market. I find I don’t waste any ginger that
way. I stir-fried this in my wok, as it
just seemed simpler than a saucepan.
It’s very
pretty, very easy, and tastes great.
Gingered Pea Pods and Red
Pepper

Tablespoons Butter
4
Ounces Pea Pods -- or frozen 6
ounces
2
Small Onion -- cut in 8 wedges
each
1
Medium Red Pepper -- cut in
strips
1
Tablespoon Grated Ginger Root
1/4
Teaspoon Salt
In 2 quart
saucepan, melt butter until sizzling; stir in all remaining ingredients. Cook over medium heat, stirring occasionally,
until vegetables are crisply tender (7-11 minutes).
