Catalina Chicken

 A good source for recipes are the major and minor food companies. Most of them have some recipes and they are usually good as they are trying to get you to use their products in different ways. 
 This recipe from Kraft used up some Catalina dressing I had left and I usually have apricot jam on hand. This is quick to get together and than bakes while you have time to relax after work, chat with the kiddies or read the paper. I served it with cooked rice and green beans. A salad is what they recommended which would also be good.

Catalina Chicken Breasts
6 servings
Time 55 min
Servings: 6 servings
2 tsp. oil
6 small  boneless skinless chicken breasts (1-1/2 lb.)
½ cup Catalina Dressing
½ cup apricot jam
3 Tbsp. (about 1/2 of 1-oz. pkt.) dry onion soup mix
Directions
Heat oven to 350°F.
Heat oil in large skillet on medium-high heat. Add chicken; cook 4 min. on each side or until browned on both sides. Transfer chicken to 3-qt. casserole.
Mix dressing, jam and soup mix; pour over chicken.
BAKE 35 to 40 min. or until chicken is done (165ºF).

      This really is a good way to fix chicken and simple also. I fix it with thighs quite often.

  2. I can't stand apricot anything, could you use peach instead?

    1. i would think you could use peach, it might be a little sweeter than the apricot would be. You could taste it and add some lemon juice if it is too sweet.
