Corned Beef Hash

 A good use for your leftover corned beef brisket is Corned Beef Hash. This recipe was very good. It is from the Cooking.com web site. I do find that sites like this have some excellent recipes. They are in the business of selling you a product and have recipes to use their products. If you haven’t looked at them, try some of your favorite products or food items web sites.
 I cut the potatoes fairly small as that is the way we like them. For the three of us this was enough for supper and lunch for Bettie to take to work. 
 Do let the mixture set and brown in the pan without stirring for the time allowed to get a brown crust on it. Good for breakfast, brunch or as we eat it for supper. Lots of folks sprinkle the hash with vinegar. It cuts some of the rich flavor of the hash.
Corned Beef Hash
Ingredients
2 tablespoons butter
½ small onion chopped
½ green pepper, optional (I don’t use it)
2 cups chopped cooked, cooled peeled potato
1 ½ cups (8 ounces) chopped cooked corn beef
Directions
 In a large skillet over medium high heat, melt the butter. Add the onion and pepper if using and cook until softened, about 5 minutes. Stir in the potato and corned beef and press into the pan. Let cook without stirring for 5 to 7 minutes to allow the mixture to brown. Stir and turn over and cook for another 5 to 7 minutes.

  1. Good morning. I've never cooked corned beef from scratch like you do, but we do eat canned corned beef. Do you think I could use canned corned beef in this recipe?. It looks like a quick and easy recipe for busy days

    1. Hi Connie, I am sure you could. Or else if you have a Deli in your grocery store have them slice some corned beef thicker and use that.Either should work just fine.
