Sour Cream Smashed Potatoes


 In a hurry for a delicious side dish?  These mashed potatoes are quick and easy; no peeling required.  Sprinkle with a little fresh herbs if you have parsley or thyme.  The taste of real potatoes and butter make these extra special.                

Sour Cream Smashed Potatoes
  8         Ounces  Russet Potatoes
     1/4  Cup  Sour Cream
  1         Tablespoon  Butter
Dice unpeeled potato about 1/2" cubes.  Place in saucepan, cover with water.
Bring to a boil, reduce heat to a simmer and cover; cook 16 minutes.  Check for doneness with a fork.
Drain and place butter in pan and return to heat to melt.  Remove from heat, add hot potatoes and sour cream.
Mash lightly with a hand masher and serve on warm plates as a side dish.
